Abstract

Pedagogical management can be defined as the set of teaching styles with which each teacher directs the process of teaching and learning, based on the intrinsic and extrinsic needs of their learners. These teaching styles are developed as each moment of the class is carried out in 3 different phases: planning, implementing, and evaluating, with the aim of  guaranteeing the correct development of the class. To this end, research has been carried out at the Instituto Universitario Rumiñahui in the subject of Food and Beverage Cost Control, with the aim of using the conceptualization to generate techniques to be implemented in professional practice, based on the experience of teachers and students.
